Paleo!

Still going strong...

I LOVE some of the new recipes I've found, and have re-discovered some old favorites. I'll put the links under the picture if you'd like to try them yourself.

Breakfast sandwich. Super easy & fast- you cook the "English muffin" in the microwave, I make this all the time.

This is one of my favorites! Cauliflower jalapeno popper casserole.
I actually used pickled (in a jar) jalapenos the second (or maybe third) time around and liked that flavor better.

Twice baked breakfast sweet potato. This is my newest favorite breakfast. It sounds weird, right?! It's no- so good! Especially if you leave the yolks a little runny.

Chocolate "granola." I eat this like cereal some mornings, or on my yogurt.
I think I would add some type of dried fruit in the future... Cranberries, maybe?

As I'm looking at my Paleo Pinterest board, I'm finding tons of recipes I've made but forgotten to take pictures of. They were all good, so here are the links...
 
I made a super- wonderfully, awesomely- fantastic "dump bread," but didn't take any pictures. You can customize it however you want, mine had mini dark chocolate chips, dark chocolate cocoa powder, cinnamon & zucchini. It was sooooo good.
