Dominating Paleo

After a few weeks *ahem* of being very lenient on what I was eating, I decided to re-enter the Paleo universe. With a vengeance. One night I made:

Carrot gingerbread muffins (for breakfast)
Some yummy trail mix (for snacks)
Crackers- to be used with...
... this awesome roasted eggplant dip (for snacking)

 A few days later I baked some Paleo bread, which turned out ok. A little short on the height side, but I blame elevation for that...



It does, however, make FANTASTIC French toast (and really good BLT's)
 Then, for lunch one day, I made spaghetti squash Pad Thai. All my chicken was uncooked and frozen, so I just made a veggie version and threw in some cashews. It was REALLY good!
